White Bean Green Chili Enchiladas Recipe
Ingredients:
- 2 cups cooked white beans (or 1 can, rinsed and drained)
- 1/2 cup chopped green chilies (mild or hot, your choice)
- 1/2 cup chopped spinach or kale (optional for added greens)
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Sea salt and pepper to taste
- 6–8 corn tortillas
- 1 cup green enchilada sauce
