When You Want Ramen Without the Takeout: Miso Peanut Ramen

Craving something authentic Japanese ramen? I love to share these ingredients with you. This week’s Recipe of the Week is perfect for you. I called it Miso Peanut Ramen Bowls. If you love creamy, savory, warm, and easy to prepare food, this one is for you.

This ramen broth is perfect because of the miso, peanut butter, ginger, garlic, and other secret ingredients. You can make your own fresh noodles, but I prefer to use fresh noodles I bought at the store just to make things easy. I make this every time I’m not feeling like ordering food or going outside. Perfect for cold weather.

Ingredients

For the broth:

  • 4 cups low-sodium vegetable or chicken broth
  • 2 tablespoons white or yellow miso paste
  • 2 tablespoons natural peanut butter
  • 1 tablespoon low-sodium soy sauce or tamari
  • 1 teaspoon fresh grated ginger
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • 1 to 2 teaspoons rice vinegar
  • A small pinch of chili flakes, optional

For the bowls:

  • 2 portions ramen noodles
  • 1 cup sliced mushrooms
  • 1 cup baby spinach or bok choy
  • 1 small carrot, thinly sliced
  • 2 soft-boiled eggs
  • 2 green onions, sliced
  • Sesame seeds for topping
  • Nori strips, optional

How to Make It

  1. Let’s start by warming the broth in a medium pot over medium heat. Add the ginger, garlic, and other aromatics. Let them cook for a while until you start smelling that warm, delicious aroma. You want the broth to become fragrant, but do not burn the garlic, as that will make the taste different.
  2. Reduce heat, whisking miso paste plus peanut butter together. Maintain constant movement until contents form smooth, creamy textures. Add soy sauce, sesame oil, or rice vinegar. Assess saline levels before augmenting seasonings since miso, soy sauce offer profound savory profiles initially.
  3. Include mushrooms plus carrots, permitting simmer until softening begins. Introduce spinach or bok choy briefly towards finish points so greens retain fresh appearance.
  4. Cook the ramen noodles separately according to the package directions. Drain them and divide them between two bowls.
  5. Distribute hot miso peanut liquid plus vegetables above prepared noodles. Arrange every bowl utilizing soft-boiled egg, green onions, sesame seeds, or minimal strips of nori if preferred.
  6. Then grab a spoon and enjoy it while the broth is still hot.

A Few Easy Swaps

  1. This recipe adapts easily, explaining success regarding busy midweek dining cycles.
  2. Seek increased proteins? Include shredded chicken, tofu, shrimp, or edamame. Require supplemental produce? Integrate cabbage, broccoli, zucchini, or additional mushrooms.
  3. If peanut allergies exist, try almond butter or substitute nut oils conforming toward dietary requirements.
  4. Modify heat intensities as well. Adding chili crisp or red pepper flakes introduces temperature variance, while mild versions highlight inherent miso plus peanut tones more profoundly.
