Recipe of the Week by Alternative Health Care Concepts
Creamy homemade walnut butter, ripe banana, and cinnamon come together in this simple breakfast. Make the walnut butter ahead of time, then use it throughout the week for toast, oatmeal, yogurt, or fruit.
Homemade Walnut Butter
Ingredients
- 2 cups walnuts, raw or lightly roasted
- 1 tablespoon coconut oil or avocado oil, optional
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 to 2 teaspoons honey or maple syrup, optional
- Small pinch of sea salt
Directions
- Preheat your oven to 350°F.
- Spread the walnuts on a baking sheet and roast for 8 to 10 minutes. Let them cool slightly.
- Add the walnuts to a food processor.

- Add cinnamon, vanilla, and sea salt.
- Add the oil if you want a smoother consistency.
- Add honey or maple syrup if you prefer a sweeter walnut butter.
- Blend again until smooth.
- Transfer to a clean glass jar and allow it to cool completely before covering.

Make It Part of Your Breakfast
Pair the toast with plain Greek yogurt for extra protein. For a dairy-free option, try unsweetened soy, almond, or oat milk.
The combination gives you whole-grain carbohydrates, fiber, healthy fats, and plant protein in a simple breakfast.
You can also use the homemade walnut butter throughout the week. Try it with apple slices, oatmeal, yogurt, or a smoothie bowl.
