Recipe of the Week: Shrimp Tostadas with Guacamole and Mango

Some meals are worth making simply because they look beautiful on the plate.

Juice of ½ lime

For the guacamole:

2 ripe avocados
¼ cup diced red onion

Juice of 1 lime
Salt to taste

For the mango topping:

1 ripe mango, diced
2 tbsp finely diced red onion
1 tbsp chopped cilantro
Juice of ½ lime
Small pinch of salt

For serving:

6 small corn tostadas
Fresh cilantro
Lime wedges
Jalapeño slices, optional
Thinly sliced radish, optional

Start With the Shrimp

Pat the shrimp dry first. This little step helps the seasoning stick and gives the shrimp a better sear.

Place the shrimp in a bowl and add the olive oil, garlic powder, cumin, smoked paprika, chili powder, salt, pepper, and lime juice.

Give everything a good toss.

Heat a skillet over medium-high heat. Add the shrimp and cook for roughly 2 to 3 minutes on each side.
