Recipe of the Week: Hearty Zuppa Toscana Soup Bowl with Bread

A Cozy, Creamy Soup to Warm Your Thanksgiving Table

As the holiday season approaches, I find myself drawn to meals that bring warmth, comfort, and people together. Thanksgiving is often centered around a generous table filled with favorite dishes, but sometimes the simplest recipes become the most memorable.

This week, I’m sharing a bowl of Hearty Zuppa Toscana Soup—a comforting combination of savory Italian sausage, tender potatoes, fresh kale, and a creamy broth. Served with warm, crusty bread, it makes a satisfying meal for a chilly autumn evening or a lovely starter for a Thanksgiving gathering.

It’s easy to prepare, full of comforting flavors, and perfect for sharing with family and friends.

  • Perfect for sharing: Make a pot for family dinners, holiday gatherings, or a cozy weekend meal.

Hearty Zuppa Toscana Soup Bowl with Bread

Prep Time: 15 minutes
Cook Time: 30–35 minutes
Total Time: Approximately 45–50 minutes
Servings: 6

Ingredients:

  • 1 lb Italian sausage (mild or spicy)
  • 4 medium potatoes, washed and sliced or diced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 3 cups fresh kale, stems removed and roughly chopped
  • 4 slices bacon, cooked and crumbled (optional)
  • 1 tablespoon olive oil, if needed
  • Salt and black pepper, to taste
  • ½ teaspoon Italian seasoning
  • A pinch of red pepper flakes, optional
  • Warm crusty bread, for serving

Instructions:

  1. Brown the sausage.
In a large soup pot or Dutch oven, cook the Italian sausage over medium heat, breaking it into smaller pieces as it browns. Drain excess grease if needed and set the sausage aside.
  2. Build the flavor.
In the same pot, add the onion and cook until softened. Stir in the minced garlic and Italian seasoning, cooking for about 30 seconds until fragrant.
  3. Add the potatoes and broth.
Pour in the chicken broth and add the potatoes. Bring the mixture to a gentle boil, then reduce the heat and simmer for about 15–20 minutes, or until the potatoes are fork-tender.
  4. Return the sausage.
Add the cooked sausage back into the pot. Stir gently and allow the flavors to come together for a few minutes.
  5. Make it creamy.
Lower the heat and slowly stir in the heavy cream. Avoid bringing the soup to a rapid boil after adding the cream.
  6. Add the kale.
Stir in the chopped kale and cook for another 3–5 minutes, just until the leaves soften. Add salt, black pepper, and red pepper flakes to taste.
  7. Serve and enjoy.
Ladle the warm soup into bowls. Top with crumbled bacon, if desired, and serve with slices of crusty bread for dipping.

A Few Tips for a More Enjoyable Bowl

  • For a lighter version: Use half-and-half or evaporated milk instead of heavy cream. The soup will be less rich but still comforting.
  • For extra vegetables: Add sliced carrots or celery with the onion.
  • For a thicker soup: Lightly mash a few cooked potato pieces against the side of the pot and stir them into the broth.
  • For meal preparation: Store leftover soup in an airtight container in the refrigerator and enjoy within 3–4 days. Reheat gently on the stovetop. The potatoes may soften further, and the cream-based broth may change texture slightly after freezing.

A Little Holiday Food for Thought

Thanksgiving reminds us that food is about more than what is on our plates. It is also about slowing down, sharing a meal, and enjoying the company of the people around us.

A hearty soup like Zuppa Toscana can be a lovely addition to the holiday table. It brings together protein, vegetables, and satisfying carbohydrates in one bowl. Pairing it with a little bread makes it even more comforting.

As you enjoy your holiday favorites, remember to listen to your body’s hunger and fullness cues. Take your time, savor each bite, and allow yourself to enjoy the occasion without feeling pressured to make every meal perfect.

From our kitchen to yours, may your Thanksgiving season be filled with warmth, gratitude, and good food.

Happy cooking and happy Thanksgiving!
