Healthy Tuna Patties

Directions

1. Mix

Place the drained tuna in a bowl and break it apart with a fork. Add the onion, parsley, egg, lemon juice, mustard, seasonings, and oats or breadcrumbs.

Mix until well combined.

2. Shape

Let the mixture rest for 3–5 minutes so the oats or breadcrumbs can absorb some moisture.

Form into approximately 6–8 small patties.

If the mixture feels too wet, add a little more oats or breadcrumbs.

3. Cook

Heat olive oil in a skillet over medium heat.

Cook the patties for about 3–4 minutes per side, or until golden brown and heated through.

For baking: Place on a lightly greased baking sheet and bake at 400°F (200°C) for 15–20 minutes, turning halfway through.
