Shrimp & Veggie Miso Soup (Low-Purine & Gut-Friendly)

🛒 Ingredients (Serves 2–3)

  1. 8–10 medium shrimp, peeled & deveined
  2. 3 cups low-sodium vegetable broth
  3. 1 tbsp white or yellow miso paste (don’t boil it to preserve probiotics)
  4. 1/2 cup chopped bok choy
  5. 1/2 cup sliced shiitake mushrooms
  6. 1/4 cup grated carrot
  7. 1/4 cup cubed soft tofu (optional)
  8. 1 tsp grated ginger
  9. 1 clove garlic, minced
  10. 1 tbsp chopped scallions (for garnish)
  11. 1 tsp sesame oil (optional)

Instructions

  1. Heat the broth in a saucepan until hot but not boiling.
  2. Add ginger, garlic, carrots, mushrooms, and bok choy. Simmer for 5 minutes.
  3. Add shrimp and tofu, and simmer until shrimp are pink and cooked through (about 3–4 minutes).
  4. Remove from heat. Stir in miso paste (dissolve it in a little hot broth first to prevent clumping).
  5. Garnish with scallions and a light drizzle of sesame oil.
  6. Serve warm and enjoy with a side of steamed brown rice if desired.
